Fermenting vs. Pickling
Fermentation is a metabolic process that produces chemical changes in organic substances through the action of enzymes. Similarly, pickling is the process of preserving or extending the shelf life of food by either anaerobic fermentation in brine or immersion in vinegar. While these processes are relatively alike, one easy way to keep them straight is by remembering that pickling involves putting food into an acidic brine to produce a sour flavor, whereas fermenting gives food a sour flavor without any added acid. Because of the additives needed in the pickling process, such as excess vinegar and sugar, fermented foods tend to be cleaner than pickled; however, both are tasty options and carry health benefits.
