Dragon Fruit and Mandarin Salad
1/2 dragon fruit
2 mandarin oranges
2 cups arugula
salt & pepper
Place your arugula in a medium bowl. Peel and slice both mandarins, squeeze the juice from the edge pieces of the fruit over the arugula. Drizzle about a tablespoon of good olive oil over the greens as well. Toss lightly to coat. Arrange your sliced mandarins, dragon fruit, and avocado over the greens and sprinkle with pomegranate seeds. Season with salt and pepper or any additional herbs or seasonings you’d like. The idea for this salad is to be simple and versatile with seasonal fruit.
