Lychee Rice Pudding
1 cup fresh lychees, peeled and seed removed
1/4 cup long grain white rice
2 cups oat milk (or alternative nut milks)
2 tbsp honey
1/2 tsp vanilla extract
3 tbsp almonds, toasted and chopped
pinch ground cardamom
1/4 tsp cinnamon
Place a small pot over medium heat and add rice, milk, honey, and vanilla. Bring to a simmer and then lower the heat, cook the rice for 20 minutes.
Pull the skins and seeds away from the lychee flesh and with your fingers, pull apart into smaller pieces. Add 3/4 of the cup to the rice pudding along with spices and mix. Add more milk if necessary, taste your rice and continue to cook down for another 10 minutes or until you’ve reached that creamy consistency.
Pour rice pudding in two bowls and top with toasted and chopped almonds, option to add a splash of more milk, additional fruits or honey. Enjoy!
