Overnight Mamey Oats
1/2 cup rolled oats
3/4 cup oat milk, or any other dairy-free milk
1/4 cup coconut milk
2 tbsp chia seeds
1 tbsp flax meal
1 tbsp maple syrup
1/2 mamey, divided
In a blender, combine 1/4 of the mamey fruit and the banana with the milk and coconut milk. Blend until smooth.
In a medium bowl, mix the dried ingredients with the mamey blend and toss to combine completely. The mixture will be loose but does firm up in the fridge over time.
Let it soak in the fridge for at least 2 hours, but it's best to soak overnight for 8 hours. This will yield a creamier consistency. Top with mamey chunks and any additional toppings you’d like.
